Texas Roadhouse Loaded Sweet Potato Recipe

Ingredients:

  • For the Sweet Potatoes:
    • 4 large sweet potatoes
    • 2 tbsp olive oil (for skin crisping, optional)
    • Pinch of salt (optional)
  • For the Cinnamon Butter:
    • ½ cup unsalted butter (softened)
    • ¼ cup powdered sugar
    • 1 tbsp honey
    • 1 tsp ground cinnamon

  • For the Toppings:

Instructions:

Bake the Sweet Potatoes
  • Set your oven to 400°F (200°C) to preheat.
  • Thoroughly wash and scrub the sweet potatoes.
  • Dry them and rub them with olive oil (about 2 tablespoons, optional to get crispy skin).
  • Prick each of the sweet potatoes 3–4 times with a fork.
  • Transfer to a baking sheet lined with foil or parchment paper.
  • Bake for 45–60 minutes until tender when pierced with a fork. (Depending on how big your potatoes are.)
  • Take it out of the oven and cool down a little before cutting into pieces.
Make the Cinnamon Butter

In a mixing bowl, combine:

  • ½ cup butter, softened
  • ¼ cup powdered sugar
  • 1 tbsp honey
  • 1 tsp cinnamon
  • ½ teaspoon of vanilla extract (optional)
  • Whip until light, fluffy, and creamy, with a hand mixer or whisk.
  • Chill if making ahead.

Putting the Loaded Sweet Potatoes Together

  • Cut the sweet potatoes in half vertically, then open them carefully.
  • Use a fork to fluff up the inside of the potato, till you can separate the potato flesh.
  • Drop in the cinnamon butter in each and add one more full spoonful.
  • Spread brown sugar on top of them.

  • Broil for the Toasted Finish
  • Set oven to broil (high).
  • Broil sweet potatoes for 1–2 minutes, or until marshmallows are golden brown and slightly melted. Be careful not to burn!
